Prune and walnut brownies

Prune and walnut brownie
I decided to give these brownies a try today - they are from the Something for Everyone book by Louise Fulton Keats. The brownies are a fairly "healthy" version of a brownie. The recipe doesn't use any refined white sugar and has protein from the walnuts and almonds as well as added fibre from the prunes.

There are quite a few parts to the recipe, but its all fairly easy to follow. Crushing the walnuts, milling the almonds, grating the chocolate, then melting it. Its one of those recipes that uses a lot of the functions the thermomix has to offer.

The brownie cooks quite quickly too. I didn't have a square tin, so I just used a rectangular tin. It was probably a bit bigger than the tin recommend in the recipe, but it worked well enough.

The only thing I would do differently next time is maybe chop the prunes up a bit smaller than I did, but that is really personal preference!
